oil<\/p>\n<h3>BUTTERMILK SAUCE<\/h3>\n<p>140g Gorgonzola or cheese of your choice<br \/>\n\u00bd cup buttermilk <\/p>\n<\/div>\n<div class=\"col-md-12\">\n<p class=\"info\"><span><strong>PREP: 45 minutes<\/strong><\/span><span><strong>COOK: 4 hours<\/strong><\/span><span><strong>SERVES: 6-8 people<\/strong><\/span><\/p>\n<\/div>\n<div class=\"col-md-12\">\n<h2 class=\"directions\"><strong>DIRECTIONS<\/strong><\/h2>\n<ol>\n<li>Toast peppercorns in skillet over medium\/high heat until fragrant. Grind in spice grinder (or by mortar and pestle) until coarsely ground. Mix in salt and garlic powder, and then add olive oil to create a rub.<\/li>\n<li>Unwrap frozen roast and season liberally with peppercorn mixture.<\/li>\n<li>Cook at 325\u00b0f for 2.5 hours. Alternatively, cook on BBQ: keep one side of BBQ on medium\/low heat and one side completely off. Place roast in foil tray and put on side of the BBQ that is turned off. Close BBQ and cook for 2 - 2.5 hours, checking every 30 minutes. If the roast is getting too dark, place some foil on top.<\/li>\n<li>Rest roast for 5\u201310 minutes. Slice 1-inch \"steaks\". Grill steaks on BBQ at medium\/high heat to get deep, dark grill marks. Cook through 4 - 5 minutes per side.<\/li>\n<li>Pulse gorgonzola and buttermilk together in a blender until smooth and evenly incorporated. Tip: Make ahead up to 3 days.<\/li>\n<li>Boil Yukon gold's in salted water until slightly undercooked. Cool potatoes, and then smash with your palm to create more surface area. Drizzle with olive oil, pinch of salt and pepper. Grill on high heat to brown potatoes and create a crispy exterior.<\/li>\n<li>Quarter the Treviso. Drizzle with olive oil, sprinkle with salt and pepper. Grill on medium\/high heat for 1-2 minutes until just softened and colored slightly.<\/li>\n<li>Drizzle the buttermilk sauce on a platter. Arrange the potatoes and Treviso. Then, serve steaks either whole or sliced for easy sharing. LIne the tray with parchment paper for easier cleanup.<\/li>\n<li>After 60 minutes, brush with basting micture to prevent drying<\/li>\n<li>Remove when meat thermometer reads 165 F (74C)<\/li>\n<li>Make chimichurri by finely chopping the parsely and mixing with rest of the ingredients. Taste and adjust.<\/li>\n<li>PLace chimichurri in the fridge for the duration that the turkey is roasting too further develop the flavours<\/li>\n<li>To serve, allow turkey to rest for 15 minutes, then slice. Worcestershire sauce<br \/>\n1 Tbsp. soy sauce<br \/>\n2 tsp. apple cider vinegar<br \/>\n4 Tbsp. corn starch (adjust per preference)<\/p>\n<\/div>\n<div class=\"col-md-12\">\n<p class=\"info\"><span><strong>PREP: 1 Hour<\/strong><\/span><span><strong>COOK: 2-3 Hours, Depending on the size of the turkey<\/strong><\/span><span><strong>SERVES: 4-6 People<\/strong><\/span><\/p>\n<\/div>\n<div class=\"col-md-12\">\n<h2 class=\"directions\"><strong>DIRECTIONS<\/strong><\/h2>\n<ol>\n<div>\n<h3>Preparing the Turkey for Roasting<\/h3>\n<\/div>\n<li>Preheat oven to 400\u00b0F<\/li>\n<li>Remove turkey from the bag and pat dry using paper towels<\/li>\n<li>Mix softened butter with the oregano and parsley in a bowl<\/li>\n<li>Using your hands, rub the mix all over the turkey<\/li>\n<li>Gently dislodge the skin and add some butter underneath the skin to keep it moist<\/li>\n<li>Place 1 quartered onion inside the turkey cavity along with the 2 sprigs of thyme<\/li>\n<li>In a roasting pan, place onions, carrots, celery, garlic, turkey giblets, and the stock. This will be the gravy base<\/li>\n<li>Place a rack in a roasting pan and put the turkey on the rack. The turkey needs to sit above the vegetables but not directly on top<\/li>\n<div>\n<h3>Preparing the Glaze:<\/h3>\n<\/div>\n<li>In a saucepan, mix all glaze ingredients and simmer on medium heat for 5 mins<\/li>\n<li>Set aside to cool<\/li>\n<div>\n<h3>Roasting the Turkey<\/h3>\n<\/div>\n<li>Place turkey in the oven and let it cook for 2-3 hours depending on size<\/li>\n<li>With half an hour remaining, check internal temperature of the turkey by placing a thermometer in the thickest part of the breast which should read  165\u00b0F and in the thigh should read 180\u00b0F.<\/li>\n<li>Remove turkey and cover with foil. Allow the turkey to rest for at least 15 minutes before carving<\/li>\n<div>\n<h3>Making the Gravy<\/h3>\n<\/div>\n<li>Place the pan with the liquid and vegetables on medium heat  (if the pan cannot be used on the stovetop, transfer to a stove safe pan)<\/li>\n<li>Add Worcestershire sauce, soy sauce, apple cider vinegar, and more liquid if needed<\/li>\n<li>Allow liquid to simmer for 5 minutes<\/li>\n<li>Taste add salt if necessary Place cornstarch in a bowl add a few tablespoons of liquid then whisk vigorously to create a smooth slurry<\/li>\n<li>Add slurry back to the liquid and simmer for 5-10 minutes until thickened.
